There are a few different ways to cook meat, so let's start with that...
1. basic campfire- equip the raw meat and point at the fire until it prompts you to add meat to the fire... the meat will be taken from you and automatically placed on a "stick" and start cooking. It will cook until you hear a "ding" sound, meaning the meat is done cooking and ready to eat. If you aren't sure, you can aim your pointer at the meat and it should say "cooked" when it is ready.... if it doesn't say cooked, it's not done yet.
2. smoker- equip raw meat and aim pointer at the upper portion of the smoker until you get prompt to add meat. You can add up to 5 pieces of raw meat to the smoker at a time. Light fire below and wait for it to cook.... At the first "ding" the meat will be cooked... you can eat it now or you can leave it on to cook more which will eventually "ding" again meaning the meat is smoked and will last indefinitely. Either way, when you aim at the meat it will tell you it's status... raw, cooked or smoked.
3. Hobo stove- You can drag and drop pieces of meat onto the top grill part of the hobo stove and cook the meat until it dings, again the meat will be labeled cooked when it's ready to eat.
With all of these methods, you can interact with the fire and add more burning materials (fibrous leaves, palm fronds, wood) at any time if there is room in the fire to add more.
As far as you getting sick when eating the meat, this can be caused by a few things as well...
1. raw meat- If you didn't thoroughly cook the meat until it says "cooked" on it, you will get sick.
2. If you had cooked meat but held it too long in your bags until it became rotten... will make you get sick.
3. If you had raw meat in your bags, and then picked up cooked meat, you may have encountered the bug where cooked meats (for some reason) stack with the raw meats and so when you go to eat it, it makes you eat raw meat instead.
To fix this you should always only skin what you intend to cook right away, and if you only cook the meat, eat it right away... Don't have raw meat in your inventory when you pick up cooked meat from the fire, or else it will probably stack together and end up feeding you the raw meat instead. If you smoke it, the meat will last indefinitely. It is generally best to smoke all meat you don't intend to eat directly after cooking... meat spoils fast so either eat it or smoke it.
