Lol yeah I just remembered that I have no idea why I used water as a example when the issue will be food eventually due to the lack of wood/palm frond to burn.

Well I guess the respawn question still stand though, they should make everything respawns after 30 or so days.

But I have no idea if a diet of only fruit might create problems with health: in-game tips often say that your diet needs to be varied.

At the end you will run out of stone, but: I can't do the math to save my life, but it seems almost an infinite time before you run out of stone for a knife!

I would imagine it would be quite some time yes, I believe thomlovessue said they survived around a 1000 days. I guess that gives some indication of just how long you can go if you are careful and use your rocks wisely.
Remember you can use just the stone tool to harvest Yucca or Fibrous Leaves then when its condition is low craft it into a stone knife or crude axe as you do not get penalised for using a low conditioned stone tool.
Edit:As a side note, of course if you believe in adding new custom islands as you go is a way to simulate the older version with infinite islands (like I do). Then getting more and more rocks wouldn't necessarily be a problem... of course that is a whole different conversation (can of worms) lol.

Absolutely! I do that as well, just because I like to try out new islands and not die of boredom in the vanilla islands, before the stones run out lol
All this, is a completely hypothetical situation. I dare anyone to waste their time trying to determine how long you can survive before you run out of stones...
