Stranded Deep has a different map each time you play. The world is a grid (tilted so islands don't line up with the sun and compasses are harder to use)and most squares have a procedurally generated island. Some squares are empty or have special features. There is a "cartographer" that lets you create your own custom island and place it into the world. People can try each others islands, its a lot of fun! The Forest is more developed and has more to do. But Stranded Deep has unique features: Lounging around on a tropical beach, diving on numerous shipwrecks, crafting rafts and bases, shooting coconuts out of trees,lol. Stranded Deep is a chill game, you make it what you want it to be--no real plot--just simple survival. Optional rescue at the end (is coming).
*I almost forgot the sharks! Yes there are sharks that will eat you.
the forest is more fleshed out, has a story, mechanics that make sense and are enjoyable. The forest is the better single player experience (the best right now would be subautica) at the moment.
Stranded Deep is a chill one, low develop time (they are a small group of devs) and have editor to make your own islands and share with others (no workshop) and other nice stuff. I cannot say nothing about The Forest since they go for the zombie way that is dead long ago.
Subnautica is amazing, this is different. If you liked subnautica, or fallout, 7d2d ect youll like this game. I enjoyed it.
