At times, you can explore areas and get as much info as you want - and other areas have an timer going before the next event happens. It warns you of the latter decently IMO. I've only done roughly 33% of the game i think; but the story is very interesting so far.
[edit: ] the stress level of the game overall is not high IMO; but you need to be alert to do some quicktimes from time to time. If you miss them; you could always let it start from the last autosave and it'll have you very close to the quicktime (if you care about it that much). But, it's not a very stressful game to me; it has a little suspense - but it's more of an investigation story (not a suspense/horror).
This game is really named Fahrenheit and this is the uncensored one with the sex scenes. This game and all their games focus on the story but combat is quicktime events and the story revolves around storytelling but also choice. So what you do in this game can affect other characters and how the story plays out.
Its been so many years since I played this game but I believe this is the only game where the main character if they die the game is over.
