I understand the ending says the monsters were all cleared out, so either give us a NG+ save or a "This will send you back to before you beat the boss!" save, please!
Although what exactly is changed when the final boss is killed? You could even make it so the final boss respawns no matter what.
Of course, it's up to y'all, but yeah, people get reeeeeeally attached to their percentages in games like this, and having it impossible to have a 100% save file will make a lot of people sad, haha.
As far as New Game +... Perhaps having an option in Karthas once you've beaten the final boss, probably from the mayor or perhaps the magic saleswoman, to enter NG+ with your current equipment and items, and a new seed.
For the New Game+, perhaps you could return to the roots that somewhere in the Mines a new door is unlocked and the area inside has an infinite amount of floors and on each floor enemies are harder and harder and the equipment they drop is better and better.
You could also go Boktai (Bokura no Taiyou) that on each floor one of the enemies always drops a key that is needed to unlock a door to the next floor, So players would not kill enemies mindlessly, but to find the key.
