Gold is 5, while purple could be 4-5 blue is 3-4 etc
So the color is not necessarily what makes a ships better, you could have a Purple ship that has better characteristics than a Gold ship just because of Port Bonuses RNG. (Assuming this has not changed in the last patches of last year, I recently started playing again myself).
Beyond that what counts is the Woods Used, plus the Port Bonuses plus the Upgrades plus the Books used.
Now some of it is a bit Situational to the purpose of the Ship, are you makin g a ships ofr PvP a Ship for PvP in Open Sea or a Ship for PvP in port Battles, it can vary plus, there is also the player's PlayStyle. Some players perform better in some builds no matter the activity.
So you have to be a bit more specific, what would you like to use the ship for primarily?

Excellent addition, I completely forgot the Upper Left Corner Trim indeed. I get these when I craft ships randomly, on Blue and above quality, I never seen them on Green and I was not sure if they are 100% on Gold.
