With higher quality ships, you may also get a second 'trait', generally either Speed or Stiffness.
As for what they actually do, no specific information is around, but as a crafter, these were my conclusions from before Early Access;
Random - Picks one of the 4 below, no benefit
Build Strength - adds health to the sides, bow and stern, also adds some leak resistance
Crew Space - adds a few % to total crew (much like the Extra Hammocks module)
Planking - adds less health than Build Strength, increases the 'armour' (bounce chance)
Rigging Quality - adds sail health and improves sail and yard handling
The other two, Speed and Stiffness, can not be picked and are random, and are as follows;
Speed - adds a straight up bonus to ship speed
Stiffness - reduces how much the ship heels (tilts) due to the wind
I am in the process of documenting every ship I build at the moment in order to try to get some numbers for how these and wood types actually affect the ship, but that will understandably take a while.
