I can't seem to get into the main trade menu while on the world map as seen in vids....
Did they recently remove the main trade menu?
Press M for Map, press the More tab, find the Trader Tool and enter the name of the commodity you wish to trade.
The Store in your port will list the commodities that it will buy and sell. This is convoluted, so I hope the dev improves the UI, but I pick a commodity that is in plenty of supply that also hopefully costs a fair amount. Then I go to the Trader Tool and enter the commodity. I'll get a list of Buy and Sell prices. Buy = I want to buy at this price, Sell = I want to sell at this price, it's backwards from what I expect, but oh well. Then I sort the ports by distance. 0 = my current port, so I can now compare local prices. I try to find a port where I can sell for even more than I buy. I prefer expensive commodities since cheap commodities tend to take up space for low profits.
No matter what, the best prices are generally from smaller production ports selling to capitols. In capitols, most prices are inflated.
Indiamen are pound for pund the best trade ships, but you can trade in any ship. If you trade a lot, you'll likely gain gold faster than experience, which may limit your early growth, since you need XP for bigger ships.
Finally, remember BUY LOW SELL HIGH. The lowest price is free: raiding enemy ships. All it costs are cannon rounds (free, plus the cost of cannon), and men (life is cheap), and possibly a few measly repairs as long as you don't lose your ship.
That link is broken
