Can someone explain the different character types?
I've heard about there being different types of characters like Charge characters and Grappler characters but I have no idea what these mean for play style.

Can someone explain the differenct character types in Street Fighter V?

Here's my opinion at the matter. I'm not sure if I categorized a character properly, though:

Rushdown - they are the type who excels at in-your-face, ultra-fast attacks and keeping the opponent under pressure with their relentless offense and usually opens up defense using frame traps. Majority of the characters in this game are rushdown like Karin, Necalli, Cammy, and M. Bison

Neutral - the jack-of-all-stats type of character. They are the type who excels at mid-range battles. Footsies and spacing are their specialty and they usually start their offense through whiff punishing. Here is where Ryu, Chun-li, and Nash.

Zoning - the ones who excel at long-range battles. These characters can't handle close quarters combat so it's best that they use all of their tools to keep the opponent away. Good thing is that they're very good at keeping the opponent away through either their versatile fireballs or long-ranged normals. We have Dhalsim and F.A.N.G in this category.

Mix-up - a type of character which uses mobility and unorthodox movesets to confuse the opponent and make them vulnerable against your attack. Usual methods of offense include cross-ups and dash unders. Rashid and Vega falls in this category.

Grappler - a character which utilizes powerful striks and throws for huge damage, as the latter cannot be blocked. The downside is that they require extreme patience especially against zoners. They have a few windows of opportunity to attack so every offense should count. Zangief falls in this category.

Hybrids - a character which has access to more than one type, but as the saying goes "ace of all trades, master of none." We have Laura (grappler/rushdown), R. Mika (mix-up/grappler), Birdie (neutral/grappler) and Ken (neutral/rushdown).

I'm not an expert, but I guess I would split them into these groups, with some potential overlaps;

Rushdown; applying constant pressure on the other player using fast attacks meant to overwhelm them. You use your higher speed to your advantage to beat the opponent to the punch.

Grabby characters; exploiting some characters need to either jump or get up close to use their specialized grabs that often hold priority over the other players attacks. Thse characters are often less mobile, but do more damage.

Deffensive type characters; Either using charge inputs, have slow startups, or have movesets that are good utility moves to defend against incoming attacks. They often rely on blocking the opponent to start their combos and do major damage.

Then there are the really technique based character; Often utilizing a large varied moveset to execute complex strings of attacks. Here, making the right choice at the right time is key, as your toolset is large, and can be confusing.

Now, these aren't exactly the generally accepted characters types by the fighting game community, but rather my own observations of the differences that matter as a fairly new player, as I am not exactly brilliant at fighting games myself. It's possibly my favourite genre of games, but it's hard to get good at on your own. I'm sure someone can give a more detailed and mor general description of how it all breaks down, but this is how I see it.

Birdie and Zangief both are heavy slow and lot of patience

Shotos are basically any characters that vaguely share the same Shoryuken, Hadoken, and Tatsu moveset. Think Ryu, Ken, Dan, literally half of the SFIV cast, ect.

Correction on a few of the classifications.

Birdie is neutral heavy. A lot of success you get form him is based on spacing from his V-skill, his long reaching normals and always being at the proper distance to get a command grab. And in some cases getting a mix-up scenario where you use V-skill banana and upward chain grab within the similar distance.

Ken is also more neutral as well as he can attack/react from mid range/far screen distance. And you use his variable movement from his V-skill and V-trigger to get good angles, get inside to work your frame traps in order to open your opponents up.

Nash is actually mix-up heavy. His mobility is subtle but his fast dash and back dash along with good spacing lets him stick out his buttons and put him in solid situations for his V-Skill.

Those are a lot of different way to classify the characters, but the types he's talking about are:

Charger: characters with specials where you must hold (charge) one direction for a second or two, then press the opposite direction + attack button, for example, Kikkoken and Sonic Boom are made by holding back, then pressing foward + punch. Chun Li, Guile are Nash are classic examples of those characters.

Grappler: characters focused in grabbing, with lots of command grabs in their disposal, and.... that's it. Zangief, Mika and Laura are examples.

Shoto: basically any character who has a fireball + uppercut combination without those being charge moves. Ryu, Ken, Sagat, etc.
