nVidia ShadowPlay is probably the better one in terms of simplicity + performance + options, if you have an nVidia GPU. OBS is very flexible on the long run, it has very professional settings, if you want to take your time to customize it.
Windows 10 Game DVR works with any hardware.
After you've setup your screen recording software, you can start SFV, open your profile + select the replays you wish to encode + start encoding + upload the encoded videos to YouTube or any other video platform afterwards.
For fighting games in general it's visually better to record replays at 60 FPS, which is supported on YouTube, also don't go below 720p for your uploads. Recording while playing online (steaming) is not recommended, because it affects the online lag.

It's usually better to record the replays and not the "live gameplay", so that your performance is not crippled (frame drops/ lag).
