But when it comes to stages, it's definitely the Kanzuki Estate (daytime).
Many others are nice too: Temple Hideout, Air Force Base, Shadaloo Base (at night), Bustling Side Street.
Temple of Ascension needs a lightning fix, so that the characters are illuminated by the the stage ambience.
Cool. Question is about their soundtrack though, not characters.

Yeah haha, it's worded pretty poorly though, could easily be interpreted as "Favorite character? And favorite stage themes?" To avoid confusion, the title could have been something like "What are your favorite themes (character/stage)?" or something.
Anyway, I absolutely love the Bustling Side Street Music too. I think it's one of the best. Also the Lair of the Four Kings music, Temple of Ascension music and Kolin's theme. Couple of other parts as well. Really like the melody on the train station stage, but the rest of that tune is kinda meh.

I really enjoyed both Vega versions (soft/hard), I never heard those before. Added.
I didn't even realize there was another track in the game with lyrics! I almost never play in the Skies of Honor and don't even own the stage. The track is alright, I actually like the second part with lyrics more than the first part :)
