There is a huge nuance and context to be made, friends.
This is Pixel art due to the technology and economy of the time.
Pixels in addition very well detailed and magnificent. From the moment they applied 3D. From the moment they had the economic means to have better technologies notably via the purchase by 3DO, they started to make 3D.
Pixel art (which has nothing to do with Ashan's design) was a technical and economic constraint but it was magnificent and very well detailed (almost realistic in its context especially for the scenes of the buildings/Inn/trainer ETC...).
I remind you however that I am talking about the graphic style of the universes, and not particularly the games themselves. But once again it is necessary to put it in context and put it into perspective.
The only thing I can't stand is the cities art, it's looks like Might & Magic Heroes VII or something. And the battle map looks like Songs of Conquest, but I can't say I don't like it.
I am a die hard fan though of the world of Ashan and given a custom campaign editor am making Ashan based stories in this game
Have you seen the Dungeon reveal or the end-of-year recap? The town screens are fully 3D and explorable like Heroes V.
This isn't at all correct, HoMM3 units were made by extracting pixel / sprites from the 3D models. Meaning extra effort was put in to get that drawn/pixelated design.
Its a bit of both id say. A pure olden style wouldve been this:

Its not really the same creature.
All creatures from 1-3 had continuity between them. Just that the graphics improved.
Why did we get a Black Dragon that is purple and walks on all 4's here in this game?
Its even more realistic but its not the majestic BLACK dragon that existed in the world before.
So I feel they are not being consistent with the world that was built in Erathia/Axeoth .
