I like using a DK for PvP healing. Keep in mind that a lot of PvP healer builds are different from PvE healers. Many use resto staff and sword and board. Best way I can describe the playstyle is it's sort of in between a healer and a tank. DKs have great tankiness and group utility, and their skills are straight forward, so they're a natural choice for a tanky healer. The key things are you're throwing up buffs and heals, while laying down debuffs on enemies, but also staying alive even vs gankers and small zergs. This one from Deltia is a good starting point: https://deltiasgaming.com/builds/eso-dragonknight-pvp-healer-build/.
