For the dlc, is the above bundle including most of the dlc?
I know there is a membership and Crown Store stuff.

Once your Subscription expires, you no longer have access to these DLCs unless you buy them with Crowns (specific to the server you bought them on).
There are DLCs such as Clockwork City, Murkmire, etc, and are a mix of Dungeon and Zones. These won't be included in the Collection or your Gold Edition.
You can find bundles for DLCs which give you a better price. For example, there's a bundle on sale currently for the DLCs during the Deadlands story year.
1. buy collection and enjoy all chapters without much dlc content and without crown
2. join membership without the newest chapter, but with most dlc and monthly fee...
I have no idea how the gameplay will differ
Necrom won't be included in the monthly subscription until the next expansion comes out which could be up to two years away

I don't use Steam anymore, but your options typically are:
- Upgrade. This option is a standalone purchase and is not a bundle.
- Collector's. This option is a bundle that includes what it states and previous stuff. However, this is the most expensive option as it usually include extra stuff as well as preorder items.
- Expansion name but does not say "upgrade". This option is your standard bundle that includes what it states and previous stuff. Does not include collector's edition cosmetics.
Summary, TLDR:
Necrom Upgrade - Necrom only
Necrom Collector's - expensive content bundle (extra cosmetics and maybe a mount).
Necrom - standard bundle
Subscription is long term for maybe at least 1 year so I'm unlikely to do now
I may get the collection bundle without extra stuff if having nice price on sale
I guess the price should be less than 3 month of subscription
Someone said my Gold Editon already have some of the important dlc
Then I'll join the subscription only when there is a dlc sale
That time I can get that 1650 crown and to play the dlc for 1 or 2 month

You were lucky to get the Gold edition when you did because it's not offered anymore. The Gold edition includes base game, Morrowind and core DLC content.
DLC is crown store only now. The only time that's not the case now is if you are logged in during an event where you are awarded certain DLC (for free) for participating - assuming you own the expansion that gives you access to the event (usually the newest expansion).
Lately, it seems Zenimax's goal is to see how little effort they can invest in newer content before people stop buying it. They haven't reached bottom yet...
As far as crown store goes, avoid it unless you get crowns from ESO plus. The crown store is stupidly overpriced.
ESO goes on sale regularly; however, newest expansion takes time before it goes on sale. The best sales on content typically happen when a new expansion is released.
I usually just play the game one expansion behind because I don't want to pay full price. I don't pay full price or preorder any games anymore.
