1. Each day you can do 3 endeavours for 45 seals. Each week you can do 1 weekly for 215 (therefore every 7 days you can get 530 a week).
2. Most expensive super flashy mounts are 16'000 seals (just over 6 months) though they discount them at times and have ones for 4k seals.
On top of this, crown crates are offered as log in rewards which can have some mounts in.

And how do you think ESO is still afloat and thriving? What keeps new content getting made even after 10 years? Those people need to get paid. ZOS is not a charity, it is a business.
Thing is ESO has the highest split towards the cash shop of any MMO
ESO has barely any "veteranship" catalogue of items to show compared to the other competitor MMOs on the market
MMO's in general are charging for basically everything. FFXIV has a big cash shop, and WoW has a smaller one but still. ESO cash shop is the worse of them all. I bought my friend the base game of ESO and he just doesn't like how everything is sold. So to some people, it's just totally offputting.
I think if you really want to find something more on the classic experience (sub and earn everything in-game) you have to look elsewhere. Two games I can think of is City of Heroes, and Final Fantasy XI. Might be more but you're going to have to go back to older MMOs.
MMO's have just changed, as others have said the cost of doing business is high and gaming has long been the best value for entertainment. Cash shops, and pay to progress / win in games will just become the norm.
I get annoyed when mounts exclusively come to the cash shop in FF14 too, but it's a rarity in that game. Probably about 90% of the mounts in FF14 are earnable in-game. It gives reasons for people to play the game. I guess thats why FF14 is successful and this game has fewer players than Skyrim on steam.
