First things first, trying to compare an MMO to a Singleplayer RPG is a bit hard to do.
However, I'll always pick Skyrim 100% of the time, simply put, Zenimax dropped the ball. First impressions count, and even if they completely started from scratch(Obviously they won't), my interest for this has been squandered. My trust in Zenimax to deliver a REAL Elder Scrolls product and not some half-baked attempt at an MMO. Which is sad, I had real high hopes for this game. I tried my best to overlook the glaring issues, I WANTED to love this game with all my heart, but damn it fights me every step.
The game does have an excellent crafting system compared to most MMOs. It has weak banking, inventory, and auction house systems, but they have slowly been improving. That said, you should certainly look towards Add-Ons to get some features that probably should have been part of the core game from the start (I strongly recommend http://www.esoui.com/addons.php ). I do enjoy combat, but be aware that some of the solo boss battles do require very specific tactics (kind of like mini dungeon boss battles). At later levels, they can be quite challenging if you don't figure out what to do. I absolutely love the public dungeons -- they remind me a great deal of my experiences with Befallen in EQ at times. And there are other events that remind me a little bit of the Rifts from Rift but with less variety (unfortunately).
I have not yet gotten to Veteran levels (I'm an altaholic), but I understand some of the issues with that, and there's already been changes slowly filtering in to convert that to a different system and to introduce late-game combat that is more similar to early game content.
It's not the 'greatest game ever', it's flawed, but it's still a lot of fun.
Just a little fyi, things have improved since the beta. Not only does the combat have collision now, but the quest variety has improved.
That said it's very diffucult to directly compare a single player RPG to an MMORPG, as they are structured completely differently. If you simply want a great gameplay experience I say go for the single player game (Skyrim in this case, but don't limit yourself to only the latest TES game). If you want a fun experience with a group of friends then a MMORPG would be a better choice (that said ESO isn't well known for it's connectivity). As with all games, just due dilagence.
Especially with nudity/sex mods, so you can have a virtual waifu while you slay dragons.
... Everyone should have this attitude, Morrowind is a great game.
Only if, that does mean anything to you...
There is the kicker, why do you think bethesda have not lowered the price the old TES games here on steam or on other retailers to 80 and 90% after the ESO launch as it was before, they knew the game was going to be sort of a fail, there is why they charge so much for the initial imperial edition... just in case things go wrong...
