Things become more of a challenge at first.
After level 50 you start earning CP points and start building your characters strength and skills, your gear stays leveled at 160CP , is true, just needs to be repaired as usual.
Are some Bosses that you can still solo, others have always required a group, like 2,4, to 12 players.
The same is true for dungeons.
Things become a bit more complex.
But as you grow you will get stronger as you develop your skills and acquire better gear sets.
Eventually you'll laugh at the 4.5 million health/shield bars on some Bosses, even roll a 4 player job or two solo, depends upon any minions, who live to brighten your day.
Join the Undaunted when able, that will tell you where you stand handling tough situations solo on your very first run.
Vet content is another story.
That's the short of it anyway.

RN i am CP 1240-ish, on my one and only character, a Magplar with Oakensoul, Orders' Wrath and Hexos' Ward (it gives an almost permanent 12k shield) and i rarely encounter a world boss i can't solo. My damage is shtako, but my survivability is very nice.
Back in my time, I was also advised to keep playing and leveling till i get to L50 CP160 to finally be able to get the gear i need for an actual build and i second that.

Main thing is to know the mechanics of the boss already. If you don't know that, your chances are very slim that you'll defeat the World Boss. Because even with that awesome super buff the game gives low level players, you can easily be 1 shotted from a World Boss or thrown around like a rag doll before they chew you up and kill you, if you don't know the mechanics of the World Boss you're fighting.
Know the Class you've chosen and their skills. Reason I've been able to beat World Bosses at such a low level, has greatly to do with having some kind of self-healing from a Class skill. Without some kind of self-healing, your chances are extremely slim that you'll defeat a World Boss. Not all Classes offer early access to their self-healing skills they might have until you've gained enough Experience in said "skill tree" which obviously comes from being higher level from playing more.
Having good or decent Sets to wear throughout your game play helps considerably during World Boss fights, especially at low levels. I'm a Master Crafter, so it's easier for me to craft gear for my characters and that makes all the difference on surviving solo on a World Boss. So I would recommend doing that or asking Friends or Guildmates for some help in making some gear for you, there are many who would be more than happy to help anyone with this.
Last thing, you'll always want Potions on you... especially some Health Potions when you're lower level and fighting World Bosses.
All these things also apply to Dungeons and being able to complete them solo. Of course you will need knowledge of the Dungeon and mechanics of each Boss you encounter for a smooth run. However, only on Normal difficulty will you be able to solo most Dungeons, but not all... there will be certain mechanics in Dungeons that will prevent you from being able to solo them. Also, very very few players can actually solo Veteran Dungeons and Dungeons that can be solo'd on Veteran difficulty are very very few, as well. If you want 100% Dungeon experience, you will have to play with others, eventually.
In order for players to be able to solo some of these Veteran Dungeons, or even just completing a Veteran Dungeon, and especially a Veteran DLC Dungeon, they have the right skills they're using, good sets they use, have a good rotation on which they execute their skills, and have the proper Champion Point buffs, which they've obtained by leveling up their Champion Points, are able to be observant on the mechanics happening in the Dungeon, "if they didn't have prior knowledge of the fights", or already knowing the fights very well through videos and practice.

!60CP DD: equip pale order ring, dodge and block mechanics then you can solo kill base game bosses easily.
DLC word bosses: You need specialised builds to kill them. They are not easy at all. It takes long too. Developers are incompetent. They can properly balance the overland content. DLC world bosses are balanced for 5-10 people. More than that melts them instantly and less than that cant beat them. It is opposite of dolmens.
Sounds like me, I rarely group. On your questions:
Yes (most of the WB's). Yes ( some of the dungeons at least over 20 anyway).
Then you also have Solo arenas and ofc the NEW Infinite Archive solo.
So much stuff to do solo, BUT you will need specialized gear eventually.
Leeching Heavy Armor set with Hexos Ward Weapons/Jewelry for example would be a set for your toughest encounters.
