hi. i've tried to play ESO on MacBook Pro M1 16 GB via Parallels and that experience was really ... meh. On medium settings i had < 30fps and my mac overheated like a hell. The main problems of Parallels is that you have to sacrifice some additional resources to run Windows. I've also tried CrossOver and on a paper it shouldn't consume additional resources but the game just won't start (neither steam nor eso client version)

ZoS said a year or two ago that they will be dropping support for M1/M2 Macs but some people have been trying to get it working via different means.

What would help is when Linux supports M1/M2. There's one being worked on called Asahi Linux: https://asahilinux.org/about/ so you can dual boot.

Sadly Apple doesn't give a ♥♥♥♥ about videogaming on a Mac.
