First because of the linked comment from a ZOS employee who already said that EU is bigger.
Second because US Servers are located in USA, sure a big country but considering the population per area its relatively low populated and there are only few countries around USA which are partly even less populated (canada). Oceanian countries and south american countries might also add to the population but I think they wont make a big chunk because no matter what, the connection / ping / lag will be horrible for them and many might choose to play other games than ESO.
EU on the other side has plenty of densely populated countries of similar wealth and people with similar interest for computer games, like for example germany which alone has a population that is almost as big as 1/3 of usa plus there are other similar countries like england, france, spain, poland, italy, switzerland and many more. The total EU population is about 1/4 bigger than usa plus there are plenty other countries around the EU, like russia which might primarily play on the EU servers or people from african countries (I even have met a few times some ingame).
Third on the EU servers you usually see also tons of people online and literally at any time.
Very few people from Australia still play this game. We have moved to WoW and FFXIV because they have Australian servers.
