All straight forward, all can do good and easy damage at low levels and have easy survivable tools straight from the beginning.
Strong in almost all situations: Dragon Knight (best at end game, at least for tanks, for damage dealers and for pvp) and Wardens (great in pvp and best healers, at least good in other aspects)
Sorcs have pets, sure, but all the stuff that makes it "beginer"-friendly comes at higher levels. Also compared to other classes its in a bad state overal at late game as also pvp and in my opinion its even not that good for solo or early play as people often say, at least templars and especially wardens can easily compete here. For example the Sorc is the class with the least Buffs available and some key buffs are more difficult to obtain (need to sacrifice things to make the class even worse while other classes have them on some of the best skills in the game) than on other classes. I dont recommend this class at all, anymore to anyone. Save yourself some headaches and choose something else. The class is not that great since a while and gets worse and worse every patch (gets nerfs, while others get buffs).
The only thing the Sorc is good for is the Oakensoul One Bar Heavy Attack build where it is the best class for, but thats it...
Necromancer is similar to Sorcerer in not being great in many aspects anymore (while it was absolutely overpowered in the past).
Btw. Warden has also a Pet which can take aggro (as Sorcerer Pets do).
But since we have Companions and Pets arent targetable in group content the "pet" argument (for beginners) has even become completely obsolete, because anyone can have a "pet" on demand nowadays, which will be much much better than Sorcerer pets or even the Warden bear are.
Overall I would recommend to choose Dragon Knight (Endgame focused) or Warden (Beginner) and forget about the others, some of them are good in some aspects (as Nightblades for PVP where they dominate among Dragon Knights and Wardens) but overall no other class comes close to those 2 classes (Dragon Knight and Warden).
Also we will get the Arcanist in a few months and the past has shown us that new classes (Warden and Necromancer) will be absolutely overpowerd when they get introduced (I guess at least Dragon Knight level of overpowerd).
You like magic? Sorcerer.
You like light? Templar
You like plants and ice? Warden.
You like be invisible? Nightblade.
For me, that's the Nightblade, followed very closely by the Necromancer.
Feel free to ignore this guy. He's just bitter because no one would buy it for him.
Game isn't going to be empty in a few months or even a few years.
I don't really have any interest in the Arcanist class, but I am interested in hanging around in Apocrypha. Has to be more interesting than hanging around the Deadlands.

I see you are stuck at overland and never encountered endgame. For that (big) portion of the game you are right.
Even I doubt that you are able / have managed to beat the most difficult (DLC) world bosses solo this way. Not that they are not doable solo but at least you usually need more than just white quality daggers and light attacks for them.
But if you are interested in stuff that is not too easy, you could open up the group finder.
And if its still to easy, choose "Veteran".
And if its still to easy, try to do / activate the hardmodes inside the Veteran Dungeons.
Is it still to easy? Then you probably dont have purchased any DLCs and you just played base game dungeons? Try some DLC dungeons out by buying them or waiting until a free ESO+ weekend.
Still to easy? Sure until here its not too difficult if you do things right and somehow have grasped how the game works or had luck with good groups but if you just werent carried by your teammates you are at least lieing because you cant just do it easily with white dual daggers and light attacks (except maybe with some troll / cheese builds). (At least with the the oakensoul onebar heavy attack build there is such a cheese build but it works with shock staff and heavy attacks, not daggers and light attacks).
And even if you are at that level there is more difficult content. Vet Trials, Trial HMS, Trifectas in Dungeons and Trials or just go PVP and fight the best or cheesiest players in the game.
Second, sure you can do endgame with templars, you can theoretically do it literally with any class but that doesnt make them as equaly suited or even great.
Sure, DK is an amazing Tank and btw. amazeing at literally anything else (except for healing where they are at least not amazeing).
But that all classes are great is just absolute nonsense for everyone who at least slightly knows the classes and how they actually perform, except if your definition of great is just viable / doing the bare minimum, then yes any class is great...
But for me the word great has another meaning, the meaning of being really good at things and not just mediocre and viable, there are several classes that are lacking, some like the sorcerer are lacking at almost any aspect (except for tanking ironically in my opinion or the oakensoul onebar build and pure single target damage against trial dummies, which has not that much of a meaning outside trial dummy parsing).
