I was born in the red, white and blue. I don't know what that all means to you. But to me it's about family and liberty and our all mighty creator, his son, his sins and our only savior. Turn back to God.

The woman "wailing" is part of a choir but solo parts could be either Special Soloist Recordings
Soprano

Conny Kollet aka “Talia"

Soprano

Gabriele Hierdeis

Link to the credits just control F to find the choir and orchestra its the Budapest Choir. Getting the actual lyrics could be difficult.

I always assumed she was singing made up words / nonsense lyrics.
Turn the music off? The music in this game is awesome. Very relaxing (when you're not in battle).

Not other games, but for me ESO is always muted. It has to be, because the sounds do get very repetitive and old, esp. the 1 billion time you ran the same long and unchallenging dungeon because the random dungeon finder isn't exactly random.

I used to, after I got some really good headphones and could hear neutral music with some heavy bass/trebble (Sennhauser HD 599) I noticed music in games has such a neat charm. Very relaxing.

Most of the music is awesome, albeit repetitive. What I really can't stand is the singing in inns and cities, some of it is cringe-bad.

I don't remember hearing too much of that. Maybe I tune it out and don't even realize it.
