IIRC you will lose the ability to deposit items into the crafting storage though you can still withdraw items already in it.

you keep all dlc skill-lines & skills you have unlocked PERMANANTLY ALWAYS, but most likely will have trouble leveling up the actual dlc skill-lines without the dlc or eso+ (however individual skills can be leveled still just by keeping them slotted) ...

the craft bag will become locked when eso+ runs out, meaning you will still have your craft bag with whatever contents it had in it, and you will be able to and primarily access materials from the craft bag at all crafting stations and from your inventory menu, BUT you will no longer be able to manually or automatically deposit any more items into the craft bag until you have eso+ again

as far as other items that are unrelated to the craft bag... you should keep all of them...
no items are ever taken away from you when eso+ expires as far as i know...
even if you store more items than you can normally hold in your bank then eso+ expires, it will follow the same mechanic as craft bag by allowing you to keep&withdraw the items just not deposit

I can confirm that the skills/items earned stay with you but you can't level them anymore. I unlocked Thieve's Guild during a free trial ESO+ and when it expired Hew's Bane was inacccesible. However, I could still open thieve's troves and all unlocked TG passives continued to work, but I could not progress the story/skills further. Then I bought TG dlc during the anniversary sale and don't have that problem anymore =)

I got the 6-month ESO sub. To make sure I don't have it auto-renew I went to Account>Subs and cancelled it right away. Everything works fine and it tells me that my sub expires in many months. Just making sure you aren't worried about benefits ending early if you cancel the sub.

This is really the only thing I want from plus, and would actually shell out for a one time purchase for it. (although I guess it'd be per character but if I HAD it I'd never need to have materials on other characters)

So about the crafting bag and getting items out of it.
AFter your subscription is up when you are at a crafting station items ALWAYS come out of the crafting bag first.

Which means holding cheep crafting goods in the bank or on your character after the sub ends just takes of space... until everthing is gone out of the craft bag.

Id suggest buying lots of the cheaper crafting stuff while you have the subscription and stuff your craft bag and then get an addon- (dustman is my favorite) to junk new ones you pick up after the subscription ends.

I'm thinking cheaper trait and motif stuff/stones and provisioning materials primarily.
