Templar is the meta healer for vet trials precisely because it can slightly outperform all other classes with its offerings. This leads to the common misconception that only Templars can heal well: Which is patently false, because any role can heal well - the meta Templar has only a small improvement over the next two best healer classes (Warden and Sorc). This problem is compounded with many vet trial guilds having an elitist bias against non-Templar healers, which leads many healers feeling shoehorned into making Templars, which gives the perception to others that only Templars can heal trials.
That being said, you can absolutely run many successful trials with an off-meta healer. Sorc healers usually will run similar gearsets to Templar healers, and the only real differences lie in the skills used.

Most trials healer builds will follow the same formula: Gear: SPC (for aiding group DPS) and 1 group utility set (Worm or Kag are common), Skills: Heals (HoTs and Burst), Group Buffs, Boss Debuffs, a couple Off-DPS skills (usally AoE for ease-of-use).
I'd suggest going for it and tweaking around with the build until you like it. Make it your own, have fun with it, and the meta be damned.
