About what you love: The closest to what you want is a Nightblade. You have high crit, high damage, use of stamina (or magicka if you want, but stamina looks more... lorewise, IMO). It's the only class w invisibility skill (other classes gotta chug a potion for that), which is a time saver and life saver when you are new and need to rush through places to explore rather than hack-n-slash your way out. Nightblades are DPS's. Don't bother using them as healers or tanks cuz other classes can do it better.
Templars are good for soloing and hybrid healer-DPS. Wardens can do either of the 3 roles well, but is better to concentrate in just 1 of the 3 (whichever you like).
About races, they are better paired w the class and role you intend. Stamblades normally favor races good for stamina. I normally prefer Bosmer due to it's synergy and lorewise w Nightblade class, while many prefer Orcs to squeeze to the last stamina numbers and related advantages of speed and health (so, cuz "meta").
You don't exactly 1-shot stuff in this game beyond overland enemies, but is not impossible to randomly (by the grace of crits) do so in PvP (at weak players).
Too much to go over back and forth, so I leave it here. Read all other comments that will rain about it and average on what you like. Also, search for websites w ESO builds (starting w YT, ofc). Alcast and Skinny Cheeks are must-read, and you can catch on Twitch some of the players who post builds (Follow those you favor to learn or you have fun watching so you don't forget them).
