How do i play solo? (Players ruining game experience)
90% of the time when i enter a boss fight room the boss is already dead upon entering, with some god-level player standing upon his corpse. It's the same everywhere i go, i stand there fighting my *** off gaining EXP fighting through a cave or something to complete a quest and then a random lvl 50 dude appears and instakills everything and everyone. Leaving no EXP to be gained for me.

I want to actually play and experience the game by myself without being interupted by a million top level players who kill everything they meet in a single blow.

Try less popular areas at peak hours if this is really a problem for you. You don't really gain any exp from killing mobs but yeah

I respect you wanting to solo. I do the same thing. However you lost me at "I want to actually play and experience the game by myself without being interrupted". You're playing an online game with many other people. If you didn't want to even see other players, you'll need to play a single player game.

I'm okay with playing with other people, but the problem is that the game doesn't match you with people who are the same level as you. If the game put me in a boss fight with a player with equal level as me there would be an actual fight with the risk of dying involved, which is part of the fun. But me being lvl 19 put with a lvl 50 player with legendary equipment killing a boss in 2 hits kind of ruins the whole experience. I'm not actually playing the game, i'm just a spectator watching the professionals do the work.

If you're taking about delve bosses or public dungeon bosses, then the "risk of dying" would only be there if you had built your character badly. A decently built character should not be at risk against these enemies, not in ESO. ESO is a casual MMO with a very low difficulty level. There _is_ challenging content, but you'll have to seek it out, and it's not in the overworld, delves, or public dungeons.

If you feel up for a challenge, try soloing group dungeons. These are instanced areas, so no one will be there except you (and your group members, if you went in as a group). Fungal Grotto I is a good place to start.

If you are in an area you have to be in, for a quest or something else, and you find the npc you need already dead, it doesn't take the long to respawn. Just circle back (lol) and kill some stuff while you are waiting for it to respawn again. Don't waste any time when you can use it to get some more experience/loot. Kill it when it respawns.

If you are worried about general experience grinding, don't grind. Do your regular overland questing. There's not so many people in ESO that they are going to get in your way that often. If you are going to grind, use instanced zones (dungeons or arenas). No one else in there but you.

Some of the earliest dungeons that unlock in dungeon finder are good places to go such as the aforementioned Fungal Grotto 1. As long as they aren't DLC dungeons, pretty much all the rank 1 dungeons are easy. You also have Craglorn. You can zone into Skyreach Catacombs. The zone is basically one big circle. Don't kill any bosses. Just kill all the trash. Zone out and then back in. Repeat.

Good suggestions already. Maelstrom Arena is also solo.
