Can I just skip the main quests?

I don't find the main quests interesting. What will I miss out on if I just skip them? Can I get to the level cap by doing only the side quests?

you could just grind a single delve if you really wanted to and get to 50, so yes.

You'll miss out on the story, the 11 skill points that the main questline provides, and the XP from these quests. None of this is crucial. The main quests of the DLCs may make less sense story-wise if you don't know what happened in the base game, but you can still play them. Skill points and XP can be obtained elsewhere, you'll get more than you need.

There is no level cap. There are certain milestones during character development, which can all be reached without touching the main quest.

It speeds up safebox runs by removing potential witnesses quickly and without a bounty.

Generally, whenever the game tells you "don't get detected" but is fine with you killing people before they spot you, the Blade of Woe is a useful tool that saves a lot of time.

You don't have to do the main quests at all, but if you want access to all the skill trees at your disposal, you'll have to do some specifics. Like for Thieves Guild, Dark Brotherhood, Fighter's Guild, Mage's Guild, Undaunted, Psijic Order, Legerdemain, or Alliance skill trees. They all require you do to specific stuff if you wanna use them all to their full advantage. They are truly beneficial to a character in the long run to have them all.

Main quest gives "Soul Magic" skill line (with one skill and one ultimate). In the past this skill was part of builds.

you can also "skip" quest by rushing every dialogue, usually every quest takes up to 10 min to complete that way (depending heavily on your horse speed and if you kill enemies in the way of the objective)
