i understand your stress over your interest in immersing in the game, but remember that we live in the real life, and even if i like too to escape reality in games like ESO or Skyrim, i try to not give too much from my soul to them
keep this in mind: writers, programers, artistes, voices and more all combined thier work made these things combined to make us feel immersed in aand inter act with fake people that.

lastly you have trouble making a move, try to look up the quest on a wiki. That way you know will happen next and be sure of yourself

Do not develop avoidance behaviors. Anxiety disorders are "disorders" because you get extreme anxiety in a situation in which its not a normal/natural/helpful response. Be aware of your situation, and most importantly, know that you are ok, and not in physical danger from playing a game, even if certain aspects of it stress you. Keep playing, and you will see that you are ok, despite the occasional uneasyness. As time goes on, that uneasyness will fade, and you will recognize that it wasnt the game that was causing the anxiety. This is where the next part comes in (the real cause of the anxiety)
Self talk is important. You have to activly be aware of your thoughts, and recognize negative thoughts when you have them, and counter them with positive self talk. It sounds cheezy, but it works. Look up "cognitive therapy" and how to change your thought patterns. I hope that helps.
Above all else, have a little fun. Gaming, for me, is a stress reducer, and helps me cope with lifes stresses.
