There is also no need to remove ESO from your Steam Library, since you can buy any one edition containing the base game on the official ESO website.
I would advise buying one of the Elsweyr packages, not upgrades mind you, as they contain Morrowind and Summerset, regular or CE.
I'm just worried that if i u buy that edition it wont grant Summerset and Morrowind for some reason. As i have heard that i need to remove the game from steam to re-buy it in order to get that edition
Your game data is not stored on Steam. The ESO website store is independent on Steam. If you by a package containing Morrowind there, you will get it.
I am afraid you are wrong. You are apparently mistaking the ingame Crown Store for the official ESO website store. Completely different and separate things.
The prices in the official ESO website store are basically the same as on Steam. The standard edition (base game + Morrowind chapter) is now on sale there and it costs EUR 9.99.
Moreover, if you own any ESO package containing the base game on Steam, you cannot buy any other package containing the base game here. Buying on the official ESO website is the the best option in such a case, as you are allowed to buy a package containing the base game there even if you own such a package on Steam.
Nevertheless, I would strongly advise against the Steam version though, as it suffers from various issues, such as the prevalent login problems (best timing was during an event last year), or the newest issue of forcing a huge download (2x 75 GB, wasn't it?) after the last game patch, basically downloading the whole game again. My Steam version wanted to do just that too, fortunately, I also own a non-Steam version.
The Steam store shows EUR 29.99 for the ESO Collection.

I see no price difference amounting GBP 6. Buying the game on the official ESO website and using that version prevents the problems I mentioned above.
By the way, Morrowind DLC (does not include the Warden class) is not the same as Morrowind chapter (Morrowind DLC + Warden class). I would not recommend buying the Morrowind DLC (3,500 Crowns) and the Warden class (1,500 Crowns) in the Crown Store, as the cost would be significantly higher than buying it as a part of any package, such as the ESO Collection, be it on Steam or on the official ESO website.

Ah, that explains it. One could also see USD in some cases, which may result in another price being displayed.
All these conversions can cause quite a confusion.
The "Purchase for Myself" option is greyed out. I see your prices are listed in Euros, I'm trying to purchase in the USA if that makes a difference?
Edit to add that I attempted to purchase the base game + Morrowind bundle in the ESO Store and the purchase button is also greyed out with the text "YOU DO NOT QUALIFY FOR THIS PRODUCT"
