The tougher question is what class to pick.
Wood Elf (also known as Bosmer) race, Nightblade class, Stamina focused, using a bow and later, at level 15, also dual wielding two one-handed weapons, may be what you are looking for.
Classes in eso are not weapon or orientation dependant (you can do whatever you want with any of them, there are some variations at very very very high content, but for 99% of the game it's not relevant).
Classes all have warrior and mage variants. Any class can wield any weapon (weapon skills and guild skills are all cross class), so you can make a dragon knight or warden archer they'll both work.
Classes are mainly important for mages, as that's where you get most of the magicka spells (they kinda replace most magic schools from the TES series, so some schools are only available to certain classes for balance purposes). Warriors only use a few class skills (you mostly only pick passives that that can work with your weapons), and usuallty have to morph them to be effective with stamina (all class skills are magicka based by default, except for ultimates).
The themes roughly look like this :
dragon knight : fire mage, alteration mage (for tanking), poison/desease damage (claws and dragon breath) dragon warrior.
templar : fire/non elemental mage, restoration mage (healer), paladin type warrior (physical close range skills and shields).
Sorcerer : lightning/non elemental mage, summoner (daedric), spellblade warrior (high aoe physical damage and physical buffs).
nightblade : illusion mage (fear, invisibility, shadow manipulation), destruction (non elemental stat drain) mage, assassin type warrior (teleport strike, high desease/physical damage while invisible etc.).
warden : ice mage, restoration mage (druid like healer), summoner (nature), ranger like warrior (nature summons morph into stamina,so you can use them as pets).
