The only thing you may need to be aware of is that if you start something on the free weekends and you don't have access to the dlc's outside of that for some reason, you'd better get everything done as you won't get access until the next free weekend.
Other than that you can zig and zag as much as you want.
If somebody knows of particular instances where this doesn't hold true, I'd like to know that for myself.
Good luck, and have fun!
Mind, that you get no choice of your starting location. You always start in the tutorial of the latest chapter you own (Morrowind-Summerset-Elsweyr).
Only after the tutorial are you free to explore Tamriel.
As for the Minion, I wholeheartedly agree, it is an amazing tool.
I tried it but even though minion doesn't say the addons need updating, they game says they're out of date?
Yes, that's normal. There should be a check box that says "allow out of date addons" or something similar. Don't be afraid to tick it.
If you are just starting, the game will probably start you off in the newest DLC area. Just leave that area, via boat/shrine, and go to mainland Tarmriel. Once you land, an npc will approach you. Go through the dialogue and you'll get a few quests added to your journal. This is pretty much how the game is meant to be played.
One thing you should keep in mind is that the game is now "one tamriel" meaning that everything scales to your level. The game used to have fixed level ranges to each area which had more or less a linear path to follow. If you complete the areas out of the original order, the story will be disjointed and hard to follow in some spots.

That guide will explain what order to follow.
Hmm so even though I'm starting in Elsweyr you're saying I shouldn't play that storyline and go somewhere else straight after the tutorial?
The story order is mainly Main game > Imperial City > Orsinium > Morrowind > Clockwork City > Summerset > Wrathstone (dungeon dlc heavily related to Elsweyr I think) > Elsweyr > Dragonhold (with the dungeon dlc Scalebreaker i think somewhere around Elsweyr), not mentioning any of the dungeon dlc as they're mostly just separate stories and Thieves Guild, Dark Brotherhood and Murkmire not really fitting in any specific point, except for Dark Brotherhood before Morrowind.
Sorry for long comment, might have gotten a few things wrong. XD
No worries about the long comment - helpful to have all that info!
I'm thinking I might still want to focus on the zone I'm starting in for now, to get my head around the game.
Can I do the Main Story at any time (the Hooded Figure and Coldharbour quests) or will I be unable to do it if I complete Northern Elsweyr chapter first?
Yes. You're going to want to follow that guide. In order to do that, you need to go to mainland Tamriel. Mainland Tamriel is where the base game content is. Start there and progress until you eventually reach the later chapters like Morrowind, Summerset, Elsweyr, etc.
In the end, play the game how you want, but if you do stuff out of order, the story will be all jumbled up.
