Do the dolmens in Auridon go from top to bottom or from bottom to top?
In the order they spawn

There is no order to any dolmen. It depends on the last time they were killed.

There is an order. When one dolmen is defeated, the next one in the cycle activates.

But I have no idea what Auridon's cycle is, sorry :/

The order changes though in every area. I farmed dolmens a lot when leveling in multiple areas.

Just fast travel to each one, destroy the one that is on then fast travel to the other 2, then you will know the order.

It is possible for dolmens to switch between clockwise and counter clockwise. This genereally happens during the earlier hours when fewer people are on.

I never experienced that on any Dolmen

Probably because you were in a hot zone. Dolmens don't have an order. The fact that some instances of Alikr Desert run clockwise while others run counter is proof enough.

A Dolmen spawns when a player approaches it. Notice how those cultists just appear from nowhere? That only happens when a player gets near enough to trigger the event. This can only happen if there isn't already another dolmen in the area active. Each dolmen also has a timer of its own to prevent chain spawning the same one, which I believe is 5 minutes from the time the boss is killed.

So the order of dolmens depends on what order people spawned them. It can change.
