Do I need to start a new character to switch from magic to melee focus?
I started a sorcerer character and have gotten to Level 50. I recently got bored of magic and wanted to become melee and bow focused. Would it be necessary for me to start a new character with a new class (templar, dragon knight etc.) in order to have a good melee setup? I know I can just equip a 2H sword but I mean in order to have a competent build.

Also, I have basically no points in health or stamina, and all my pts into magicka.

No. The exact same happened to me when I made my first sorc. I started leveling a magicka one until level 40ish then changed it to stamsorc. Stamsorcs are pretty good btw.
It will take a long time though, you're gonna have to level up medium armor, the weapon skill lines and everything.

No. You can go to a shrine and re-spec either or both your skills and attributes. It will cost you gold but not unreasonable . Also you can use a respec scroll that are part of daily rewards (sometimes). Don't remember seeing any this month.

Respec scrolls are a level up reward. But yeah, you will need to lvl up the new skill lines and reallocate attribute points, and remorph some class skills, but you dont need to start a new toon.

My Sorcerer uses a Stamina build with a bow on each bar, and she kicks butt. Unstable Familiar, Bound Armaments, Dark Exchange, Lightning Form, and Surge all have morphs that either deal physical damage, scale with Stamina, or restore Stamina, and several class skill line passives support physical damage as well.

The Sorcerer is unusual in that there isn't an in-class spammable skill or Ultimate for Stamina or physical damage, but that just makes the Stamina Sorcerer the character who gets the most out of her weapon skills. It's not as if class skills are the only source for activated skills.

The absence of stam ultimate on sorc also makes it (among the op stam passives) a very strong candidate for werewolf form.
