OP play what you want race and class wise.
I was shamed out of having a paladin-like stamina Altmer. You want to have fun with the races and class combos? What is this? Elder Scrolls? You may not.
From a pvp approach, a nord is a good idea even for a dps, because more defence is always better in pvp.
In pve, and actually vet trial pve. When you push in hard content, you actually learn that positioning is more important than defencive stats, what you want is push your dps as high as you can (so picking race that will enhance your damage, like high elf or breton) because you're not supposed to get killed (not stupidly anyway), if you have position, your tank and healers will keep you alive while you hard dps. That why you can afford to be in paper.
And in low pve areas, difficulty is not high enough to justify the little bonus any race offers.
Specify that, the op never said he was doing pvp. Not everyone do pvp.
