If you increase the FOV to 75 or more, then the turns, the curves, are more stretched and it goes more smoothly, but with an FOV of 54, it's almost impossible to get 2 stars and never 3

I finally won the SP-05 three stars rather easily after wasting about 10 hours prior to that always wondering why I'm so slow. No matter what I tried, I simply could not push as hard as I was used to and wtaching YT videos of these guys doing that challenge and seeing what they did there was a miracle to me, braking later and harder, then slamming the car into the corner quickly but stable... did not work with stability control for me, no without that it's all working.
Another side effect is that I have now more feel for the car, the game is more fun.
I haven't given up with the default FOV but I did search settings after seeing your posts and FOV seems to be nowhere. Not in video or graphics and not in gameplay options. Is that setting supposed to be available to non-VR players?
Edit: Never mind. I found this thread below which mentions having to first start a race or practice (I assume it's the same for license tests) and then open settings.

But, those having issues with a gamepad, try messing with the stability control setting, that made a huge difference for me (10 hours of failing -> success after some few attempts).
Fancy racing wheels - that must have been the reason for their relative effortlessness. I would never resort to that unless I knew nobody could 3-star the hardest of the full lap tests in a not-insane number of attempts on controller without it. I think the license tests should employ one fixed setup for each. I mean if Kunos is going to bother mandating a specific vehicle for each carefully curated driving skill test then one fixed setup would be more in keeping with the spirit of such challenges. Not complaining though.
Yes, you have to start the race and do Escape.
Then you access the “view settings” and that’s where you can adjust the FOV.
The higher the FOV, the easier it is.
Of course, it distorts the view but some people use it to get 3 stars.
If you want 3 stars, practice and get good.
