Game- doesn't need to have cannibalism.
IRL- I hope I never face that decision.

Besides - it's a game, we don't need all the options. For example I don't want option to decapitate one of (expected to be added) NPCs and put it's head on spear to let others know that I am to be avoided, I don't want option to torture NPCs, etc. etc.
You are right in a sense that, not being in such situation, I can't state with certainity that I would not eat human body. I also cannot state that I would eat human body.
People do what they prefer to do in a given instant.
So I can't state with certainity what I would prefer to do in this situation.
So I actually can't answer your question.
As I write these words however I am certain that I prefer starving to death.
I also prefer to be prefering starvation in situation in question.
I also am quite certain that I would not change my mind on what is the right thing to do in situation in question. Problem would be actually doing the right thing.

It is too gruwsome and graphic, to fit the game IMO. The game is not Kill Bill, with huge geysers of blood during or after a mauling or when hunting animals. Cannibalism fits the feel of the game about as well ad zombies, infected, lycans, wizards, robots and vampuires do. My opinion. Lots of other games have that sort of stuff. This game is unique and different in the Survival genre because it doesn't.
Now, I did a wee bit of research, and no. I probably would prefer to die of starvation, than resort to cannibalism IRL. Why? Because I discovered that some viruses, HCV and HIV both, as well as others, can and do survive freezing and thawing repeatedly. Granted, both can be killed by high heat, but we do not know that we reach that temperature in game, and IRL, without a meat thermometer, and starving (so tempted to cook but eat rare), it may still survive. And it only takes 1 surviving copy of either virus, and any of it's mutations, forms and genotypes, to infect. So, a quicker death by starvation is much preferred over a potentially long, drawn out and angonizing death by infection of a killer virus. And yes, ingestion f blood containing meats or just blood, from a person infected with Hep A B or Cm and HIV does carry the risk of infection.
And- in game? Unless you aggressively hunt and kill every animal past to the point that you have outlived the animal respawn mechanic...there is always food to be had. You may not be at 100% full, but the in game starvation exploit is used by many, and used well, to survive for very long runs, and to stretch out food suppkies. New map already, with more food avaialble and animals to hunt for food. Supposedly another map (or 2) that will tie in with Story Mode yet to come.
If they included Cannibalism, the rating agencies would demand 18+ rating. This is a big deal in the USA, where some shops won't carry 18+ products at all; it also limits promotional options and so on.
The Long Dark is on the right path to be a very successful indie game; the last thing Hinterland studios need is some stupid controversy where politicians smear their names and say "We must protect our children from this atrocity!"
For the same reason, there is not going to be sex, sexual assault and so on, or why the paper doll is not naked when you undress it.
It will still be difficult if not impossible to get <15 rating, so it's not a good idea to provoke the Entertainment Software Rating Bigots (ESRB) any further. There's already enough gore and scary contents as it is.
