In general I found that for ingredients that were not obtainable from the Trader (note obtainable not obtained) their condition, whether ruined or not, now seems to matter.
Pinnacle peaches fall into the ruined won't work category but running river oatmeal and old mill flour that can both be obtained in trade seem to work even while ruined.
I would hope that the devs would revise the recipes to show when there was acceptable condition ingredients and not just show all of an ingredient whether acceptable or not.
