I eat things but the bar doesn't seem to move much.
It's a custom game and there was no option to turn scurvy off.
Must have came enabled with an update.
Either that or you cannot turn it off.

If you aim for renewable food, you should fish a lot, I hear fishing is quite bugged at the moment, so maybe wait for a fix, but usually, you can get a lot of fish if you set 6 fishing holes with tip ups near a fishing hut.
If you eat a fish raw, you get more vitamin C but you get food poisonning, so don't...
Scurvy will make you lose 0.5% condition per hour, so it's manageable if you have long night sleep to recover.
You need to manage Scurvy.
If you're planning to go a lot days do not eat or drink anything you pick from a plant (cat tails, rose hips, roots, etc) Save them for the future when everything else is decayed.
Eat like 3 or 4 granola or energy bars and energy bars per day. To save water eat these when your thirst meter turns red which is often first thing in the morning. Drink after your breakfast but only drink half the water you need. It's better to keep the thirst meter between 1/3 and 1/2 so you can eat when very thirsty. (Opposite of real life).
Drink the Condensed Milk and eat three tins of sardines at the same time. These make you less thirsty. That is enough Vitamin C for 1 day on Stalker and 2 on Voyageur.
A can of Tomato Soup + a can of Pinnacle Peaches is enough Vitamin C for 2 to 4 days depending upon difficultly level.
Make a habit of ice hole fishing at the beginning of the week. Catch about 4 fish. Leave these at the fishing huts and come back to them when you need them. Or, when ever 20 days has elapsed to cook them. You can rotate fishing huts this way.

Also fishing with tip-ups is really easy and yields a lot of fish.
Two days is enough. You can eat 10 kg raw lake fish at once, it's 220 units of vitamin C.
