You can still cook it if the box let it remove it (I had a bug where all my salt disappeared and ht meat spoiled and could not be cured anymore so I could remove it)
If the meat is cured and go below a threshold, my gues is it can still make you sick under level 5 cooking but you get immune after, I haven't low condition cured meat yet to test.
I've got Cooking Level 5 but I realize curing meat may not count as "cooking".
Salt has been used for thousands of years to preserve meat before we had fridge so my guess is it doesn't give food poisonning at level 5 cooking.
I have been using my law condition cured meat to make pemmican bars and have been eating 0% condition pemmican bars at level 5 cooking without issue.
