Getting stuck in anything is an automatic "do not save" situation. If you are in water, Alt-F4 as quickly as possible before hypo sets in. As long as you were not injured, the game will restart back at your last save point (i.e., when you woke up, forwarded time, or transitioned an area).
With regard to frostbite, it sucks but is completely avoidable. FM has the specific tendency to get you feet wet if you travel across any weak ice. You just have to take off the clothing that is wet and dry it by a fire. If you sleep with it on and your fire goes out, it will freeze solid.

Thanks for encouraging to continue! Well, I actually use that save mechanism too (together with backups). So I just loaded an older save and continued from there. I mapped FM out so I'm leaving it behind for the time being - with around 50-60 kg of loot.
