Well, I can't remember if it had a door on it.
This depends entirely on clothes, difficulty, and weather. For instance right now in my game the air temperature is -39 Celsius inside the TWM fishing hut (mid day, sunny on day 296). My clothes give 22 Celsius, my bear bedroll is just repaired and gives 12 Celsius, I don't have a door but it would be worth 3 Celsius if I did (if my hut had a door it'd be -36 instead), so that's -39 + 22 + 12 + 3 = -2. So, no, I'd slowly freeze to death without a fire even if my hut had a door. Since it's pretty much the warmest part of day I'd more quickly freeze once it gets a bit colder.
However, since fishing is a low strain activity and you don't need to gain the max recovery from long sleep durations, you can just sleep in 2 hour stints and never really worry, if you start to freeze you'll wake up before it's too dangerous and you can light a fire or head for cover.

I'd really like it if they would make the lantern a skill and eventually allow you to start a fire with the lantern.

that's why it's so difficult to get fishing/cooking 5 on interloper because you have to have a fire running pretty much all the time. Not only that you cook 1 fish and the darn hole starts to close up again.
