It's challenging keeping track of 1 or 2 in that scenario, they could be halfway across the map, or they could be just around the corner in that gully you never ever look in...
My guess is when you pass a loading screen (e.g. Go indoors) the game can simulate that movement. So it'll place the corpse somewhere within an acceptable range of the attack.
However, you'll notice that of you compress time for any reason while wildlife are in the vicinity, they don't go zipping around.
I will always opt to wait out there with them for convenience (look for nearby caves if it's cold), but afaik if the log says you killed them, the corpses are out there somewhere.
NB - I haven't tried shelters, but I'd assume they'd behave just like any outdoor environment.
This include a wolf i shot and let bleed while sleeping in a shelter, so it seems to fully count as exterior :)
All this solved, the patrol pattern of the wolves in CH seems a lot more erratic than in ML, which is cool but does this mean some wolves actually patrol all along the map in CH instead of staying mostly in the same place once they spawned like i experienced in ML ?

And meat does decay the fastest if left still inside the carcass. Which is why it is always a good idea to try and keep track of the kills and locate them as soon as possible if you care about the meat / hides, besides the fact that frozen carcasses are harder to harvest from than fresh ones, usually.
Boo Boo patches them back up at the Ranger Station and will fix your chain mail for almost nothing if you bring him peaches.
