However, using Beachcombing at the coaslines, you can sometimes find funa such as the above, washed up on the weak ice. Then you need to grab it and get off of the weak ice beofre you fallthrough into the cold water. That is the only place you will find anything like "respawn" for many items that are otherwise finite in the game.
Reishi mushrooms are for antibiotic replacement, not rose hips. Rosehips replace painkillers. And you need to make teas from either, and use it from the first aid menu to make it work, using it from inventory as food will not give the medical treatment.
AFAIK cat tails eventually respawn. I have thoroughly cleared rivers before and come back months later to find more. I keep finding some beard, but probably missed them. If you are going for the long haul, and not just your 200 day badge, you want to conserve the 'natural' medical items for dire need. Once all your prepackaged meds run out (mainly pain killers as you eventually become virtually immune to disease) because they degrade, you will need some. I brew the teas (they can be used in a real pinch for nutrition) and stash them at choke points between maps where I can grab them if needed. The other thing is antiseptic. Unless you really avoid the wolves (and it's so much fun killing them) you want to conserve your lighter bandages with beard for when that all expires or is used up. Use your ready made stuff to survive early.
I always carry 1 rose hip on me. You rarely find more than 24 in a location and need 25 to make a cuppa. If i have 32, I keep 26 until I'm ready to cook and stash the balance away because they are heavy.
Until I have ten doses of antibiotics available, I avoid any carnivore meat. In one of my first plays I got caught like OP and had to scramble like heck to find enough stuff to get me through treatment over 3 maps IIRC. It makes good bait, and I carry one cooked serving around in case I have no other alternatives handy.
