Well, you do not have to run the server in batch mode on windows.. That way you will have better performances on the server.
mac support is also as easy
well assuming he's not done stuff that is very specific to windows and does not use native libraries that would need to be ported if not available on linux/mac

The issue is WINE emulation is only as stable as the code. As many have said if Nelson helps support going to linux native than things would work alot easier. I can tell you the client works just fine using WINE on my Kali laptop so I would expect the server to run just as well. The other option is using VirtualBox and just making a server VM that you can boot up in the background. This would also allow you to use other Windows based server programs without having to "emulate" them using WINE.
The other other option is to have another hard drive and dual boot, one client OS and one server OS. This would limit you from playing on the same machine as the server but in all honesty you should have a second dedicated PC anyway for any real server hosting.
