For PvP servers I go for:

Exercise Levels 1, 2, and 3: right out the gate. The faster I can move, for longer, the better. My survival goes way up when I can move quick.

Cardio Level 1 and 2: Don't need to wait as long to run some more.

Survival Level 1: hunting for food and water puts you at major risk.

Overkill Level 1: Nice to be able to one-hit back stab many zombies. Unless I've already found a crossbow or compound bow. Then I skip this.

Diving Level 1 and 2: I'm in the water a bunch; swimming slow sucks.

Excercise Level 4

Survival Level 2

Diving 3

Usually by this point I'm geared up fairly well.

Exercise, Cardio, Survival, Warmblooded(upgrade first but only on the frozen maps), and crafting.

Maxing excercise and cardio, most of people do that cause these skills are very overpowered and make the game so much easier (faster travelling, running from people, scavenging). Food is easy to obtain, especially when you give a few points in agriculture or max it - then you have like unlimited food. Most of survival skills are just not that good as these in the offense tree - I bet 90% of people playing multiplayer have their specialty offense. Really, the mechanism of the specialty should be rebuilt, maybe half of what its now, and what it was back then - like 25% cheaper skills + losing 2x less (specialty tree) points after death compared to other trees. But not not losing anything.
