I'm seeing many youtube videos on people creating things out of makeshift vehicles and driving them, but I cant place anything on them? Why is this..

You can't place everything on vehicles. For exmaple you can't place down a wooden floor but you can place down a wooden large plate which is like a floor but you can't put pillars on it.

The most used building materials used for makeshift cars are:

Large Plate
Small Plate
Siding
Pipe
Barbed Wire
Doorframe
etc.
