Real Survivor Save Question
I'm about to start a Real Survivor run but I'm unsure if it's safe to overwrite my existing clear file with the Real Survivor saves or not?

I'm not sure if that's possible. After you've finished your Real Survival run and save, you're good with overwriting your current cleared save, you'll keep all your unlocked outfits and stuff, but while still in the middle of Real Survival you might wanna save on a different slot to make sure you can still abort or restart your Real Survivor run for any reason.

Overwritting your Clear '00' save file means that you won't be able to start a new game+ until you finish your current playthrough and save the game again (iirc you can in RE0 but not in this one)

As long as you create a 00 save again after finishing RS it would be no problem. The only reason I'd see to not overwrite clear save files is in case you want to keep a save for Once Again mode after unlocking Hard mode but before unlocking One Dangerous Zombie.

Thank you very much for the clarification. I know in Resident Evil 0 the Wesker campaign needed to be totally separate so I just wanted make sure I didn't erase several runs by saving in Real Survivor.

Not true, you can always start a new game+ even if you overwrite your existing save file and haven't finished it yet. Just return to the main menu after you start the game and select once again.
