If REmake was extremely faithful to the classic and then some, then they ought to do the same for 2 & 3. Unlike RE1 though, 2 & 3 aged fairly well all over, so I'm not sure what's gonna happen in a remake aside from the obvious upgrades.
There's a fan made RE2 remastered project video on youtube that shows gameplay with different views.
I can also live with over the shoulder if I have to. First person can go die in a ditch.
Sadly it isn't. Have you tried to kill the enemy that patrolls the mansion section of LIN when playing with fixed camera angles? Aiming is nearly impossible, the laser sight/crosshair system the series borrowed from the shooter genre doesn't work with fixed camera angles, unless the game switches views when aiming. But then, it won't be fixed cameras the entire game unless they ditch the TPS/FPS aiming.

It could have auto-aim when fixed camera angles are active.
