Weapon: Damage / Energy Regen OR Crit Damage / whatever / Crit Damage OR Attack Speed
Hat: Health / Crit Damage OR Attack Speed / Health% / Crit Damage OR Attack Speed
Face: Same as your hat, except a lot of people switch out Health% on the 3rd slot for damage.
Ring: Damage / Energy Regen
The second and fourth slots are the only slots that can house Critical Damage or Attack Speed, and you ultimately want both. If you absolutely have to sacrifice one of them, it's Attack Speed. Since your passive enrage increases your attack speed dramatically anyway, you may or may not be able to still maintain a good speed without it on your gear. (You can also use the dive ability if you can aim it well for the speed boost.)
About the face slot and the extra damage it provides... it isn't a whole lot. I think a fully-forged and pearled Radiant item is capable of having somewhere in the range of 900-1000 extra damage on the third slot. If you have Health% on that slot, you have an extra 74% health. If survivability is a problem for you, try using Health% on the face item's 3rd slot and see how it goes.
One of the only classes I would say to have damage on the face item without question is the Fae Trickster, because of how the Fae's passive works. That amount ends up being stacked and multiplied with your weapon's damage to a pretty extreme extent. As an example, my L15? Fae with only an S4 weapon, S3 hat/face item, and S3 ring can hit for over 120k. Without damage on the face slot item, that would drop to probably around 109-115k.
If you really value that little bit of extra damage, swap it out to damage instead, but be prepared to not only have less than half the health you previously did, but also be prepared for your Swirlwind candies to no longer heal you as much. They heal based on your maximum health.
Then there's pets. With the ideal setup, you want the Rapt Berserker for the 20% physical damage. However, against Shadow Tower bosses that don't have adds dying around you, you might want to swap it out for either the Prowling Shadow (health leech) or Shield Servitor (-damage% and flat Energy Regen that stacks with other sources).
