What are the dragon souls stats boosts ...
... and which is the best for a dracolyte?

Almost all dragons have those stat boosts not only soul ones.
They are there to increase your stats and PR (30pr per legendary/ancestral dragon)

For all classes it's best to have all boosts at once.

For sure not dragon with AS boost. Dracolyte has 0 AS and can't increase this.

Apart from this it totally depends on his playstyle ;d
Tank? -> take dragon with HP, health regen etc
DPS? -> take dragon with CD/CH/dmg etc
