For further customizations you can do all the 3D work by yourself (rails, coaster trains and supports, trees, models) if any texture isn´t good enough for your liking =)
You need to know how and how to optimize a game asset (moddeling, polycount, LODs, etc.) for a game engine, tho. Especially the shader-part of the materials in NL2 is a really powerful tool at your hands.
You can also use 2 or 4k Textures for the terrain, inclusive a bump map and a specular map to fine-tune your "look and style", if you search for doing someting like this.

Beside the documentation, i recommand to explore and play with all the options available of a custom environment.
